♥ Sambal Petai with Ikan Bilis & Scallops stir-fry


Have you heard of Petai (Bitter Beans)? Sambal Petai with Prawns stir-fry is a popular dish back home in Singapore and i reckon most Singaporeans have either heard of/know/tried this dish. I was told before by my mum that petai (bitter beans) is good for health because it rids our kidney of 'rubbish' and is especially beneficial for individuals who like to eat foods that border on the salty side (yes, that'd be ME). Petai helps to prevent depression and helps to overcome premenstrual syndrome (PMS). It can also help to lower your blood pressure! Other benefits of petai (bitter beans) can be found here. Whenever I feel slightly homesick or miss food back home, I'd go hunting for products that are marked "Product of Singapore" with the hope of locating that homely flavour in the dish. Silly me i know ^_^  Usually, sambal petai is stir-fried with ikan bilis and/or prawns. My version includes ikan bilis and scallops:)




Recipe for Sambal Petai with Ikan Bilis & Scallops stir-fry adapted from Pig Pig's Corner's Stinky Petai with Homemade Sambal Belachan:


Ingredients:

1 Onion (sliced) (Note: I used shallots.)
200g Squid (cleaned & cut into rings) (Note: I used scallops.)
200g Petai Seeds (peeled & washed) (Note: I used canned petai in brine.)
1/2 cup crispy ikan bilis (anchovies)
4 tablespoons sambal belachan
1 tablespoon tamarind concentrate (Note: I excluded this; didnt have this around in my kitchen.)
1 teaspoon sugar
1/4 cup water



Instructions:

Step 1: Saute onion with a bit of oil until soft.
(Heat oil in pan/wok. Add in garlic, shallots, & ikan bilis. Saute till shallots are soft through and garlic is aromatic.)

Step 2: Add in sambal belachan, tamarind concentrate, & sugar. Stir-fry for a few minutes.
(Add in petai. Stir-fry for couple minutes. Add in a pinch of sugar & sprinkle some cooking wine.)

Step 3: Mix in some water.
(Add in scallops. Mix well with other ingredients. Stir-fry till scallops are cooked. Add in a pinch of salt to taste.)

Step 4: Add in squid & petai, stir fry until cooked.
(Add in couple drops of water & give it 1 last good mix. Add in sambal, mix well.)

Step 5: Mix in crispy ikan bilis.
(Serve with rice!)

Step 6: Serve with rice!

Gosh your food always looks so delish babe!!

For sambal beans, I use spicy shrimp and xo sauce. ;)

My favourite from Sanrio is My Melody, but my sister's favourite is same as you - Little Twin Stars! :)

this looks really healthy and yummy!!! crispy ikan bilis are dried small fish that you can eat as a snack?! i love it!!!!

I have one quick question! Is this Malaysian kind of food cooking with dried fish?! I think I had this kind when I had a dish at Malaysian restaurant (it was served with rice) and I liked it :D

MmMMMmM this looks like it'd be really yummy with a white bowl of steaming rice!!! and scallloooppsss I love seafood lots but I think Im developing an allergic reaction to them! When I eat it I get a small bump on my cheek that's itchy! It isn't permanent and it goes away but still!!! I love seafood!!!
